They’re Like…Really Thin Pancakes…

I was in the mood to cook something this morning but we were out of a lot of things.  After a quick inventory I found a few things that had to gobefore today’s shopping trip:-A few strips of bacon
-Chunk each of brie and goat cheese
-Some quickly wilting strawberriesThe verdict?  Crepes…I made some with bacon and brie for The Man and a couple with strawberries and goat cheese for myself.

The recipe for the crepes themselves is simple and you can use them for whatever you want.  I’ve made enchiladas with them, stored a bunch in the fridge and used them for wraps, or spread some almond butter or Rawtella inside for a snack.  I like cooking them in a little melted butter but this morning I cooked up the bacon first and fried them in the leftover grease…it was GOOD.
Coconut Crepes
(makes 4)
1/4 c. coconut flour
8 egg whites
1/3 c almond milk or 1/2 c coconut milk
For each crepe, use about 1/4 – 1/3 c of the mixture and make sure it spreads around the pan…I think they’re easier to work with when they come out thinner.  Cook over medium heat for 3 mins per side.
