The first day back after a 4-day weekend is always rough, but today I was just dragging ass like I never have before. After first formation at 6:30, I fell asleep in my car for about 45 minutes, then sat in front of my computer all morning in a raccoon-eyed stupor whilst assembling more Excel spreadsheets than I care to mention. I also consumed an obscene amount of coffee throughout the day (What? 20oz cups over at the hospital DFAC are only 60 cents! I’d be crazy NOT to…)
The Man and I came home, threw together some meals for tomorrow:
(Leftover MEATZA, carnitas, almond-flax bread and almond butter, baked chicken, and hard-boiled eggs)
…and at present I have turkey legs and garlic roasted Brussels sprouts roasting away in the oven for dinner (the last time I had a turkey leg I was just hammered-drunk at a Renaissance Faire…hopefully these turn out just as good).
Last night, we had a phenomenal steak dinner…The Man was a little worn out after the rose-bush battle (he managed to break a shovel and his brand new Smart-Phone in the process–don’t ask), so I cooked the steaks inside on the skillet to perfection (we both like ’em really rare, like the true Grok and Grokette we are), and then I whipped up a nice wine reduction sauce and steamed some green beans:
(Yes, my camera phone is absolute SH**…I’m currently in the market for a real camera so I can make my meals look like the food porn they deserve to be)
I also baked a loaf of bread that I adore for throwing a quick sandwich together or for breakfast with some almond butter…not something I do too often but I was in the mood this week:
2 1/4 c. Almond Flour
1 c. + 2 T Arrowroot Powder
1/3 c. Ground Flax
3/4 t Salt
3/4 t Baking soda
1 T Honey
1 T Apple Cider Vinegar
Optional: 1 c. Raisins + 1 t Cinnamon
Blend all ingredients well and bake in a loaf pan at 350 degrees for 1 hour.
This stuff is great with nitrate-free lunch-meat or bacon, but my absolute favorite is with some butter and smoked salmon…KILLER.
