Some Side Staples

I admit, most nights we just do a big salad and/or some steamed veggies as sides because we have so little time. But I have a few staple sides that go well with almost anything and make any meal a little fancier.  All of these are calibrated to serve 4.Bacon-Mashed Cauliflower

1 Head Cauliflower, chopped
4 Slices Bacon
1 T Olive Oil or Butter
Salt and Pepper to taste

Steam cauliflower for 12 minutes or until tender.  Meanwhile, cook bacon until crisp, reserve grease, and chop into bits.  Combine cooked cauliflower, bacon, bacon grease, oil, salt, and pepper in a food processor and puree until smooth.

(This is also GREAT with scrambled eggs!)

Garlic Roasted Brussels Sprouts

1 lb raw Brussels Sprouts
2 T Olive Oil
1 t Garlic Powder
Salt and Pepper to Taste

Place all ingredients in a large ziploc freezer bag and combine well.  Pour into a oven-proof dish and bake for 30 minutes at 350 degrees.

Rosemary Sweet Potatoes

2 Large Sweet Potatoes
2 T Olive Oil

2 t Dried Rosemary
1 t Garlic Powder
Salt and Pepper to Taste

Cut each sweet potato into 1-inch cubes.  Place all ingredients in a large ziploc freezer bag and combine well  (sound familiar?).  Pour into a oven-proof dish and bake for 30 minutes at 375 degrees.
