Buffalo Chicken Soup

It’s ridiculously cold outside today–at least for Texas.  I feel ashamed of myself sometimes when I realize how much my tolerance for cold has just gone to sh*t since I graduated.  I grew up in Virginia, where we actually had real seasons and the bi-annual blizzard, then went to college in New York where it’s just f*cking cold.  All the time.  I guess it’s because Ross grew up in Florida and his biological need for heat and sunshine is contagious.  Now when it dips below 40 I can’t even bring myself to leave the house.

OK, that’s not true…I did leave the house to go running, but I was bundled up like a friggin’ Eskimo.  Not only did I look ridiculous but I got really hot about a mile in.  Blurg.

We’ve got the half marathon in a week and I’ve got an APFT on Tuesday.  Both ought to let me know just how well (or not) this whole “Primal Fitness”/Crossfit/Not Running A Million Miles All The Time is working out for me.  It’s a big deal.  My ego is at stake.

I was inspired by Jessica’s recipe…but I had no buffalo wing sauce and like everything else in my life I needed to make it more complicated than it had to be.  Except that you can do it in the slow cooker, which is blessedly uncomplicated…like Ross…so I suppose this meal is like an edible version of us?  Is that weird?


(Note:  I made a lot because I wanted enough to last through a busy week…if you cut this recipe in half it’s probably enough for 2-4 people)

4lbs Chicken Breast or Thighs, cut into bite-sized chunks

6 c Chicken Stock

2 Small Onions, Sliced

1/2 c Grass-fed Butter or Coconut Oil

2 T Apple Cider Vingegar

6 oz Tomato Paste

2 T Hot Mustard

6 Garlic Cloves, chopped

1 t Black Pepper

1 t Sea Salt

1/2 t Cayenne Pepper (more if you want it hotter…I’m a wuss when it comes to spicy food)

1/2 t Cumin

1 t Chili Powder

1 t Dried Cilantro


Throw everything (YES!  THROW IT!!) in a crock pot.  Turn it on high.  Cook for 4-5 hours.  Serve with sour cream or a little Parmesan if you’re OK with the Dairy Thang.

Holiday News!!

Oh!  Oh!  Get excited…I’m about to do a couple posts and re-posts of Valentine’s Day-friendly meals and desserts.  I also happen to have a killer Valentine’s Day dinner planned for us.  Guys, you need to listen up…if you want to avoid shelling out a bajillion dollars for a gift, just trust me on this one…a homemade meal that doesn’t suck is so much better.  At least to me.  If you have a girlfriend or wife who would rather have jewelry than a gourmet meal, then clearly your priorities are a little f*cked up.  Sorry.  But for the rest of you, I’ll be at your disposal…stay tuned!
